Death of Dorado. Dorado: what kind of fish, where is it found, composition, calorie content, useful properties. Recipe for cooking dorado in foil

Dorada is a fish that represents the spar family. Dorada has many names: it is golden spar, aurata, sparus, even simply - sea carp! The taste of this fish is highly regarded, as is the nutritional value of the meat.

Appearance

Dorada has an oval body, which is flattened from the sides. The scaly head has a steep profile and a sharp protuberance can be discerned above the eyes. The gill covers of fish do not have spines, and the margin of the preoperculum is also smooth. The mouth is small and low. The fish mouth apparatus deserves special attention.

In dorado, the upper jaw extends over the lower one, they move forward somewhat. Each jaw has 4–6 teeth: they are strong, designed for catching. These teeth are followed by crooked and sharp teeth, followed by a couple more rows of chewing teeth. Teeth are absent on the palatine bones and vomers.

Dorada has an undivided dorsal fin, which has strictly 11 spiny rays, as well as 13 or 14 soft rays. The anal fin has 3 sharp rays, 11 or 12 soft rays. The pectoral fin has 1 sharp ray, and it has 5 soft rays. The aurat is distinguished by a dark border located in the middle of the caudal fin, the tips of which are painted in white color... On the basis of the last ray on the dorsal fin, the Dorada has a brown spot with a red tint: it disappears after death.

Golden Spar is named for the line between the eyes. It is very clearly visible in the photo: the line is colored golden, like the gill covers. The fish can get large. Dorada grows in length up to 70 centimeters. Its weight reaches 17 kilograms and 200 grams. Dorada can live up to 11 years.

Distribution and habitats

Dorada lives in the Mediterranean Sea and in the eastern waters belonging to the Atlantic Ocean. Fish are caught in the coastal areas of Turkey, Spain, Italy and France. Aurata is very rare in the Black Sea. Nowadays, sparus is successfully grown on fish farms.

Aurata is a fish that prefers to be deep enough. It can be found at a depth of about 30 meters. But during the spawning period, it goes to a depth of 150 meters. A young sparus prefers to live in coastal areas, and an adult - farther from the coast.

Lifestyle

Sparus, like many marine fish, is a protandric hermaphrodite. All individuals about 20-30 centimeters long, when 1 or 2 years of life have passed, are males. An adult fish is a female. Dorada spawns in the autumn-winter period. Spawning begins in early October and ends in December.

Batch spawning occurs at a depth of about 150 meters. The eggs hatch into larvae, which, with a length of about 5–9 millimeters, acquire a characteristic bony edge above the eyes. Dorada takes on the appearance inherent in adults, with a body length of about 15 millimeters. The fry move towards the middle.

Golden Spar is an omnivorous fish. Basically, the gilthead exhibits the qualities of a predator that eats mollusks, crustaceans and fish. Sometimes seaweed is used for food, but food of animal origin attracts more gilthead. But on the farm, the fish feeds on special pelleted feed.

Dorada tastes like sea bass (sea wolf) fish, so their meat can be replaced during cooking. Dorada gives a person valuable dietary meat, which contains less than 2 grams of fat per 100 grams of edible part. Thus, golden spar is appreciated not only among coastal countries, but all over the world. Dorada is a frequent guest on the table of those who look after their figure and health.

Delicate and tasty, familiar to every fish lover, dorada has become one of the symbols of Mediterranean cuisine and the most popular sea fish in European countries. Hundreds of recipes and ever-growing volumes make it more and more famous. Read the most interesting things about this extraordinary fish in our article.

History and geography

Dorada, also known as sea carp, golden spar or awrata, got its name from the outdated Spanish word "dorado", which means "gold" Despite the fact that the scales of the fish are silvery, people gave it such a name because there is a golden strip between its eyes. The ancient Greeks, who dedicated this little fish to the goddess Aphrodite, also called it a "talisman of love" and believed that by touching its strip three times with your index finger, you could interrupt a series of love failures and find your real soul mate. More pragmatic Romans, in turn, preferred to feed their soul mate with their own caught "goldfish". Dorada has one interesting feature: This is a hermaphrodite fish. Young individuals (up to two years old) are males, but over time they increase in size and turn into females. Another interesting fact: in Malta, jewelry with massive tusks of golden spar was often sold. They were passed off as snake fangs, which were considered magical.

Dorada lives mainly in the Mediterranean Sea, Bay of Biscay, Irish Sea, North Sea and waters Atlantic Ocean... IN recent times it is sometimes noticed near the Crimea, although previously the population of this species in the Black Sea was not observed. She also has a famous Pacific namesake, also called luminary and popular in Latin America, however, there is nothing in common, except for the name itself, between them.

Breeding

Even in ancient Rome, the gilthead was grown in special artificial ponds and pools with sea water. Mass artificial breeding first appeared in Italy (circa 1981-1982), but by the end of the eighties, this fish began to be grown in most Mediterranean countries. The main share (up to half of the world volume) of gilthead production fell on Greece, Turkey and Spain supplied 14-15% each, Italy 6%, the rest - other coastal countries. IN modern Russia its main percentage is imported from Greece, Turkey, Tunisia and Cyprus. Despite the fact that the gilthead is generally unpretentious to external environmental conditions, it does not tolerate cold temperatures, which is why there is no wild gilthead on the Russian (and Moscow in particular) market.

There are three main ways to breed golden spar:

 • Intensive

The fish are raised in ground-based containers, often indoors, simulating certain times of the year with light. This method is suitable for countries with a climate that is not warm enough for dorada.

 • Semi-intensive

Huge floating cages and feeders are being built near the shore (you can read more about cages and aquaculture in our previous page)

 • Extensive

The fish is grown almost freely in lagoons and backwaters. This method is as close as possible to the usual catch, that is, the properties of fish hardly differ from wild ones. However, this breeding method is only suitable for warm countries.

All three breeding methods of gilthead breeding have almost the same final income, however, the costs of the extensive method are much less due to the absence of complex structures and expensive equipment.

How dorada is prepared

What is dorada

A feature of the representative of the family of spar is a characteristic strip that is located between the eye sockets and shines with golden tints in the water. The people also call this fish "golden" or sea carp. It is very common and is found not only in the Mediterranean, but also in the Atlantic Ocean, and even around the Black Sea coast... The fish grows fast enough and can be grown industrially. The size of the largest individuals can reach 70-80 cm, and the weight is 15-17 kg. Average carcass weight varies between 3-5 kg.

The body visually resembles an oval, with slightly flattened sides. The head has a rather steep profile, with a slightly pointed projection in the area of the eyes. Scales of sea fish dorado are large, serrated, silvery-gray. The cover of the gills does not contain thorns and is smooth. The mouth is small, with extended jaws in which there are 4-6 teeth at the top and bottom.

The fin on the back is undivided, elongated, including 11 hard and 12-15 soft prickly rays in an adult. The lower and rear fins are distinctly red or pinkish in color.

Interesting to know! This inhabitant of the seas and oceans belongs to hermaphrodites and, depending on a number of natural factors, can change its sex.

Sea or river?

A representative of the spar family is marine, not river fish, found in the salt water of the Black and Mediterranean seas, as well as in the Atlantic. She spends most of her life at great depths - about 40 meters. Some specimens, in pursuit of food, can even go down to 160 meters or more. The structure of the scales can easily withstand enormous water pressure. Crucian carp is a fairly strong and powerful representative of the underwater world, for the capture of which you need good physical fitness, reliable, as well as durable equipment and luck. Dorado is a predator that feeds on smaller representatives of the marine world.

Harm and benefit

Like any single product, the gilthead is a fish that has both advantages and disadvantages. The latter are immaterial. The beneficial qualities of this seafood include (with regular use):

 • stabilization of cholesterol and blood sugar levels;
 • weight loss;
 • not high calorie content of the product (not fatty);
 • improving digestion;
 • prevention of age-related diseases;
 • strengthening the immune system;
 • reducing the risk of thrombosis;
 • normalization of metabolism;

 • personal intolerance to seafood;
 • the presence of a large number of small bones in the carcass.

With the utmost care and caution, this delicacy is shown:

 • Expectant mothers - pregnant women can consume this delicacy in the absence of allergic reactions. Correctly cooked goldfish meat contains a balanced and unique combination of micro- and macroelements, minerals and vitamins, which has a beneficial effect on the development of the fetus. Dorado is recommended baked, stewed or boiled. Fried fish for ladies in position is categorically contraindicated.
 • Lactating women - nutritionists are allowed to add dorado fish during lactation from its first days. In the initial months of breastfeeding, it is recommended to cook the sea catch in steam or in boiling water (boil). It is necessary to include dietary delicacies in the diet with small portions.

With this diagnosis, it is recommended to consume Dorado at least twice a week. Reviews of patients who eat this delicacy are positive.
 • When losing weight, dorado is a dietary product with a minimum content of fat, with a maximum amount of protein, which makes it possible for an overweight person to easily tolerate a strict diet.

Where dwells

Basically, its habitat is the clear waters of the Atlantic and Mediterranean. But recently, the Dorado population has been discovered in the Crimean Peninsula, from where it is caught for the Russian market. Some countries cultivate this seafood delicacy artificially.

Calorie content per 100 grams

Dorado is a dietary product, it is not fatty. The calorie content of cooked meat can vary depending on the cooking method, but never exceed 90-95 kilocalories per 100 grams.

Dorado and sea bass are the same?

Dorada is a fish belonging to the order of perchiformes, belongs to the family of sea carp (spar), but is not a sea bass.

How to cook gilthead deliciously

The fish has an outwardly pleasant pinkish meat, with a light subtle aroma, a delicate sweetish aftertaste and a small amount of bones. This quality gives her the ability to be the main course at any lunch or dinner. Cooking a predator is easy and simple - it is boiled, fried, baked, added to soups, etc. The most useful cooking option is steaming, as the Dorado meat retains all micro and macro elements, looks as appetizing as possible. The delicacy goes well with noodles, vegetables, rice and potatoes, which makes it possible to experiment and achieve the best taste of ready-made meals. Various spices and herbs - parsley, rosemary, thyme, etc. will help to spice up the golden carp. The following is the simplest recipe with a photo and detailed descriptionhow to cook baked dorado.

Dorado or sea carp (bream) is a fish of the spar family, which is caught mainly in the Mediterranean, a small part of the Atlantic Ocean and the Caribbean.

It is a rather large fish with a forked tail and a long fin on the back. It has beautiful blue scales with a green or yellow tint. Dorado meat has been valued since ancient times. In ancient Rome and Greece, they even invented a method of artificially growing it in creeks and pools with sea water, which is still used today.

What does dorado look like and where is found

It is otherwise called golden sarp or sea carp. For 2018, the maximum length is 70 cm and the weight is 17 kg. However, fishermen usually catch much lighter species. On average, 500 grams.

The sea carp has an oval body with flattened sides and silvery scales that extend slightly towards the head. The dorsal fin of the fish has spiny rays.

The scales are painted in a silvery shade, the fins have a pink overflow, and between the eyes there is a golden line.

Reference! During life, a fish has a brown spot on its tail, which disappears after death.

Dorado habitats are the Mediterranean Sea, the eastern part of the Atlantic Ocean. But in the late 90s, shoals of sea carp were noticed by fishermen off the coast of Crimea.

An interesting fact is that Dorado fish are hermaphrodites. From birth to 4 years of age, young individuals are all males. After overcoming the four-year milestone, restructuring takes place in the fish organism. As a result, representatives of the species become females. After the transformation, the female individuals begin to spawn fertilized eggs, from which young animals will appear. Under natural conditions, fish live long enough. The life span of some representatives of the species reaches 11 years. Dorado grows to a large size in its usual habitat. The largest recorded mass of fish is 39.5 kilograms.

Dorado fish composition

The benefit lies in the composition. The fish, which is attractive in taste, contains the following vitamins:

 • thiamine (B1);
 • acids: pantothenic (B5), folic (B9), nicotinic (PP);
 • cyanocobalamin (B12);
 • riboflavin (B2);
 • pyridoxine (B6);
 • retinol (A).

In addition to useful vitamins, sea carp has many minerals, including calcium, zinc, copper, selenium and others.

Iodine is found in large quantities. Dorado meat is useful for pensioners, children, and pregnant women.

Reference! Modern medicine shows that regular use of Dorado can prevent atherosclerosis, diabetes, heart attack. Fish helps to lower blood cholesterol.

What is the difference between dorado and seabass

Seabass is also a fish that is considered a delicacy along with dorado and salmon. But still, despite the equal popularity of dorado and sea bass, they have a lot of external and internal differences.

 1. First, they differ in the families to which they belong. If the dorado is the Sparov family, then the seabass is a representative of the Moronov family.
 2. Secondly, the distribution area of sea bass is much wider than that of the same dorado, which predominantly lives in the Mediterranean. Seabass is found in the Mediterranean, Black Seas, Atlantic Ocean.
 3. Appearance fish are radically different from each other. If the dorado is oval and flat, then the sea bass has an elongated shape, and its head is more pointed.
 4. The meat inside that one and the other fish is white. It tastes very tender and is almost the same, so when buying fillets in a store, you can make a mistake and take the wrong fish. Even the bones in the sea bass and dorado are few. But still, if you want to learn how to distinguish these two fish by their internal characteristics, then it is worth remembering that the bones in the sea bass are much harder and stronger. When cutting, they have to be removed with tweezers. Dorado has no problem with this. The bones are soft, they are almost not felt and can be removed quite easily.

Advice!

To distinguish fresh sea bass or dorado from stale, you need to pay attention to the condition of their heads. Firstly, the heads must be mandatory, you do not need to buy just carcasses. Secondly, the eyes and gills of a fish will tell a lot about its freshness. If the eyes are clouded, and the gills have lost their bright red hue, then this indicates that the product is not the first freshness, and it is not worth buying, so as not to harm your health.

What is healthier and tastier

Even the most sophisticated gourmets cannot answer this question - which is tastier: dorado or sea bass. Many still agree that the meat of both fish tastes the same, so it makes no sense to choose which tastes better. And by chemical composition they are identical. They include iodine, phosphorus, protein compounds and various vitamins, which indicates that they are both equally useful. The only thing that the dorado has only one plus that qualitatively distinguishes it from the seabass is bones. This has already been discussed above. Seabass has strong and hard bones that a person can accidentally swallow, and this will cause many complications and problems. You just need to be very careful, then none of the fish will harm your health in any way, it will be tasty and healthy.

Calorie Dorado

Dorado has a calorie content per 100 grams - 95 kcal. However, depending on the type of cooking, the number of calories is different. All data are given in the table.

Composition and calorie content

Dorado is a fairly low-calorie product, so many nutritionists advise including it in the diet. There are 95 kcal per 100 grams of meat, which is a very small indicator of the calorie content of a product in principle. Of course, this raw meat has such a caloric factor. If baked, fried or boiled, then this value will change. For example, if dorado is baked in the oven, then its calorie content rises to 144. If baked in foil, then the figure, on the contrary, drops to 96. When frying in a pan in a fish per 100 grams, there is still 95 kcal, as in raw meat. On a grill, its calorie content drops to 90. If you cook it, then the calorie content will also be 90 kcal.

The composition of the dorado is very diverse, so it is considered a very useful delicacy for the body.

 1. B1 (or, as it is also called, thiamine) is involved in the processes of metabolism and blood circulation.
 2. Retinol not only participates in the formation of all kinds of chemical compounds, but also improves the condition of the skin, strengthens the hair structure and nails.
 3. Vitamin B2 is responsible for strengthening the immune system, that is, it has a beneficial effect on improving the quality of human health.
 4. Vitamin B6 is responsible for the formation of new red blood cells, that is, it has a positive effect on the functioning of the body's circulatory system.
 5. B12 is responsible for blood vessels and forms new red blood cells, improves brain activity, and has a beneficial effect on the nervous system.
 6. Fish also contains three types of acids: folic, pantothenic and nicotinic. Pantothenic acid is responsible for the rapid healing and tightening of wounds and cuts, and has anti-inflammatory properties. Folic acid is essential for the body, since it is she who is responsible for cell development and DNA integrity. It prevents the development of cancer, affects the immune system, and the heart, and blood vessels. Due to the presence of folic acid in the body, a person is energized and able to work. Nicotinic acid also has an important effect. Basically, it has a positive effect on the functioning of the digestive system, improves the rate of metabolic processes and cleanses the body of unnecessary salts, fats, toxins and toxins.
 7. In addition, this product contains a lot of useful minerals. There is fluorine, magnesium, iron, calcium, phosphorus, and iodine.

Is it possible for dorado pregnant and lactating women

Due to the high amount of vitamins and minerals in dorado fish, it can be consumed by pregnant women. You should not worry about her overeating, because she does not harm, only benefits.

As for breastfeeding mothers, they should gradually introduce fish into their diet in small pieces so that the baby does not experience an allergic reaction to seafood, as well as colic and tummy pains.

Origin of the species and description

The closest ancestor of fish is over 500 million years old. This is a pikaya - several centimeters long, she did not have fins, so she had to bend her body to swim. The most ancient fish were similar to it: only after 100 million years, ray-finned ones appeared - the dorado also belongs to them. Since the time of their appearance, these fish have changed very much, and the most ancient species have long died out, moreover, their closest descendants managed to die out. The first teleost fish appeared 200 million years ago, but the species inhabiting the Earth now occurred much later, the main part after the Cretaceous period.

Video: Dorado

It was then that the evolution of fish went much faster than before, speciation was activated. Fish became the masters of the seas and oceans. Although a significant part of them also became extinct - mainly species living in the water column survived, and when conditions improved, they began to expand back to the surface. Dorado was one of the first in the spar family - perhaps even the very first. But this happened by the standards of fish not so long ago, at the very beginning of the Eocene, that is, a little more than 55 million years ago - the family as a whole is relatively young, and new species in it continued to form until the very Quaternary period.

The scientific description of the dorado species was made by Karl Linnaeus in 1758, the name in Latin is Sparus aurata. It is from him that two other names come from, by which this fish is known: golden spar - nothing more than a translation from Latin, and aurata.

Dorada for weight loss

For girls who seek to lose extra pounds and regularly eat exhausting diets, dorado fish is useful. It should be included in your diet.

An insignificant volume of fats, the absence of carbohydrates in sea carp meat with a maximum saturation with proteins and microelements contributes to the saturation of the body with useful substances. Spar goes well with vegetables.

Useful properties of dorado

The benefits of dorado were recognized in antiquity, because its meat is not fatty and is rich in vitamins and microelements.

According to doctors, this fish is great for any diet. Eating it 2-3 times a week, you can prevent the development of atherosclerosis, the likelihood of a heart attack, as well as normalize cholesterol and blood glucose.

It contains boron, iron, fluorine, lithium, iodine, copper, manganese and many other elements that are needed for the full functioning of the thyroid gland.

The low calorie content of dorado (96 kcal), high protein content (20 g per 100 g of product) and the absence of carbohydrates make it ideal for diabetics and adherents of a healthy diet.

How to cook delicious dorado fish

The most useful options for use are steamed. This will cook the fish while preserving all the macro- and microcomponents. It goes well with all vegetables and potatoes, rice and noodles.

There are several secrets to making dorado:

 • to preserve juiciness and maximum useful properties, cook in the oven;
 • juicy and aromatic will turn out baked in foil;
 • cooking should not be long to preserve juiciness, tenderness and flavor.

Social structure and reproduction

If young fish usually live in schools near the shore, then after growing up they blur, after which they already live alone. The exceptions are sometimes those dorado that live in areas of seasonal migration - they swim from place to place at once in flocks. The awrat is extremely notable for the fact that she is a protandric hermaphrodite. Still young fish, usually no more than two years old - all males. Growing up, they all become females: if earlier their sex gland was a testicle, then after this rebirth it begins to work as an ovary.

Sex reassignment is useful for dorado: the fact is that the larger the female, the more eggs she will be able to spawn, and the eggs themselves will be larger, which means that the offspring will have higher chances of survival. But nothing depends on the size of the male. It spawns for the last three months of the year, and practically stops sleeping at this time. In total, the female can lay from 20 to 80 thousand eggs. They are very small, less than 1 mm, and therefore few survive - especially since many other fish want to eat dorado caviar, and it takes a long time to develop: 50-55 days.

If the caviar has managed to remain intact for such a long time, fry are born. At hatching, they are very small - about 7 mm, at first they do not look like an adult fish and are practically helpless. Nobody protects them, so most of them die in the jaws of predators, mainly fish. After the fry grow up a little and take on a dorado-like appearance, they swim to the coast, where they spend the first months of life. Young, but grown-up fish can already stand up for themselves and become predators themselves.

In artificial breeding, there are two approaches to raising fry: they are hatched either in small tanks or in large tanks. The first method is more productive - for every liter of water, one and a half to two hundred fry hatch, because its quality can be very precisely controlled and make it ideal for breeding them. In large pools, the productivity is lower by an order of magnitude - there are 8-15 fry per liter of water, but the process itself is similar to that which occurs in the natural environment, and persistent fish appears, which can later be released into the reservoir.

The first few days the fry feed on reserves, and on the fourth or fifth day they begin to feed them with rotifers. After ten days, their diet can be diversified with brine shrimp, then vitamins and fatty acids are gradually introduced into it, microalgae are added to the water, and they begin to feed with crustaceans. By one and a half months, they grow enough to be transferred to another body of water and feed on granular food, or to be released into a backwater or another environment close to natural.

Foil Dorado Recipe

There are several options for cooking in foil. Here is one of them.

Cooking method:

 • The oven heats up to 200 degrees.
 • At this time, clean and gut the fish, rinse and dry. Grease half a sheet of foil with oil and put half of the fish there. Salt and pepper to taste on both sides and rub with oil.
 • Cut half a lemon into small slices, squeeze the juice from the other half, which you want to grease with seafood. Stuff the belly with slices and basil.

Cooking applications

The daily norm of the product for an adult is 150-250 g. For children, the norm varies with age. It is better to eat fish for lunch or in the evening. You can add it to the menu at least every day.

Many methods are suitable for cooking sea carp - boiling, frying, stewing. It is steamed and grilled, baked in foil and sleeve, boiled fish soup, cutlets are made and even eaten raw. It can be stuffed, used as a filling for homemade pies.

Dorado harm and contraindications

As mentioned earlier, few people have heard about the benefits and dangers of dorado for the body. Despite the huge advantage of fish, it has disadvantages. Among them, its high cost is noted, which means that it is inaccessible to a wide range of consumers. And the presence of small bones does not allow it to be introduced into the children's diet in large portions.

Fish have no special contraindications, except for the individual intolerance of the body. Do not forget about the exotic origin of the sea carp, which means that the body of a Russian inhabitant of the dorado may be unusual.

In order to avoid the development of an allergic reaction, the golden spar should be injected carefully and in small quantities.

Contraindications to the use of sea bass

Fish are brought to Russian counters from afar, therefore, you need to carefully monitor that the meat is elastic, of an even color, and the head and tail do not sag if you hold the fish in weight.

Do not allow small children to eat it on their own. small bones come across in the pulp.

Some people are intolerant to this family of fish, so allergy sufferers need to be careful.

Which is healthier: dorado or sea bass

It is extremely difficult to talk about the benefits of fish, since the composition of vitamins is the same as that of dorado. However, marine fish have the advantage of phosphorus and iodine. In addition, the dorado also wins in dietary terms, but the sea bass is not far behind.

Sea carp is allowed to eat even for those patients who suffer from serious health problems. But the sea bass also has no strict restrictions on its use.

As for taste preferences, only gourmets can distinguish fish, since dorado and seabass are very similar.

Features of character and lifestyle

Auratas differ from the luminaries in that they usually live alone. They spend most of their time hunting: they lie in wait for an unwary fish in order to then suddenly grab it, or swim to the surface and collect insects that have fallen into the water. But most often they carefully examine the bottom of the sea, looking for edible crustaceans and molluscs. As fish hunters, golden couples are not so successful, and therefore the main source of their food is the bottom fauna, which cannot escape from them.

Often she has other protection - strong shells, but dorado rarely resists against teeth. Therefore, they live mainly in areas of the sea with a shallow depth - so where they can explore the bottom. They move to deeper waters if there are large schools of fish there, which are easier to hunt. Dorado love calm sunny weather - it is in this that they hunt and are most often caught. If the weather has changed dramatically or it started to rain, then it is unlikely that they will be caught. They are also much less active, and if the summer is cold, they can generally float to another place where the weather is better, because they love warm water very much.

Fun Fact: When buying, dorado should be checked for freshness. The fish's eyes should be transparent, and after light pressure on the abdomen there should be no dent. If the eyes are cloudy or there is a dent, then it was caught too long ago or was stored in improper conditions.

How to choose and store Dorado fish

Dorado is divided into 2 types: royal and gray. The first fillet is softer than the second. Her eyes are bright, moist and bulging. The gills are clean and red. It is desirable to smell them - fresh fish has a sea aroma.

As for the torso, it is dense and smooth.

Advice! You need to press the belly of the fish, if the dent is quickly smoothed out, then this indicates the good quality and freshness of the royal dorado.

The sea carp should be moist and shiny.

You can store it in ice cream. But first you need to gut, rinse and place in a vacuum container. This way the fish can be stored for up to 3 months.

How to choose

Dorado habitat is tropical seas and the Mediterranean Sea. Occasionally it comes across in the Black Sea. Capable of migrating long distances, and its record weight is 39.4 kg.

Natural color - blue-green or silver-gray. Between the eyes is a golden crescent-shaped spot. Because of him, the fish was so named ("dorado" - "golden" in Spanish).

In ancient times, because of her beauty, it was believed that the luminary was dedicated to Aphrodite, the goddess of love. After death, the bright color quickly disappears and becomes faded.

It is better to buy chilled rather than frozen fish. We need to make sure that it is the dorado that is being sold. It should have a dark spot under the gills and a golden spot near the eyes. The back is dark gray, the abdomen is silvery. The most delicious fish is considered to be caught in July-October and having a length of 25-40 cm.

Fresh coryphane has clean, dark red gills, eyes are transparent. The meat is firm. If you press on it with your finger, the dent should quickly disappear. The scales are smooth, without defects. Smell - fresh, sea, fishy.

It is necessary to take sea carp in such quantities that you can immediately eat it. Of course, carcasses can be gutted and frozen, but the taste will not change for the better.

There are usually two varieties of dorado on sale - gray and royal. The latter, although more expensive, is characterized by a more delicate taste. You can distinguish it by its pinkish tint.

About taste

Dorada and seabass are considered by experts to be a universal fish, they can be eaten both raw (or rather, half-raw) and fried. This fish is also eaten baked in parts or whole, in the form of cutlets or ingredients in various soups. Due to their similarity in taste, sea bass and dorada are used interchangeably in many recipes. It is very difficult to answer the question which fish is tastier. To emphasize the similarity of products, in some countries dorado and sea bass are laid side by side on one dish. Their taste is almost exactly the same; many gourmets call it unique. At the same time, protein, vitamins, iodine and phosphorus are equally present in the composition of both fish.

Dorado is a sea carp that populates the waters Mediterranean Sea and the coast of the Atlantic Ocean. Dorado meat was revered during the time of Ancient Rome. Even the Romans learned to breed this fish in special reservoirs, noting its useful and taste qualities. Delicate, slightly pinkish dorado meat, has a pleasant, delicate aroma and sweet, refined taste.

Lifestyle and habitat

- fish pelagic. It tolerates water of different salinity and temperature well. Dorado spends its life on the surface, in river mouths, in light-salted lagoons. Mature fish adhere to depths of about 30 m, but can go down to 100-150 meters.

It is believed that the fish leads a territorial, sedentary lifestyle. But this is not an absolute rule. Food migrations from the open ocean to the coastal regions of Spain and the British Isles occur periodically. Movements are carried out by single individuals or small flocks. With the onset of winter, fish return to deeper places fearing low temperatures.

Alfred Edmund Brehm in the legendary study "The Life of Animals" pointed out that his contemporaries - the Venetians - bred dorado in voluminous ponds. They inherited this practice from the ancient Romans.

Nowadays, the cultivation of dorado, golden spars in fish farms has become commonplace. This gives grounds to assert that there are artificially grown and appeared in natural conditions species of dorado.

Golden Spar, aka Dorado, is grown in several ways. With the extensive method, fish are kept freely in pools and lagoons. With the semi-intensive method of cultivation, feeders and huge cages are installed in coastal waters. Intensive methods involve the construction of above-ground tanks.

These methods are very different in terms of construction costs, fish keeping. But the cost of production, in the end, turns out to be commensurate. The use of a particular production method depends on local conditions and traditions. In Greece, for example, a method based on the free keeping of dorado is more developed.

The extensive method of catching dorado is close to traditional fishing. Traps are set on fish migration routes. Only juvenile golden couples are industrially hatched, which are released in mass quantities into the sea. The method requires minimal equipment costs, but the results of the fish catch are not always predictable.

In lagoons for extensive cultivation, not only dorado juveniles, but also shoots of mullet, sea bass, and eel are usually released. Golden Spar grows to its initial commercial size of 350 g in 20 months. About 20-30% of the released fish adhere to the place of their life start all this time.

Dorado production with free content reaches 30-150 kg per hectare per year or 0.0025 kg per cubic meter. meter. At the same time, the fish is not artificially fed, funds are spent only on growing fry. The extensive method is often used in conjunction with traditional dorado fishing and other more intensive methods.

With the semi-intensive method of breeding dorado, human control over the population is higher than with free keeping. There are options associated with rearing juveniles to an older state to reduce losses and shorten the time to reach marketable size.

It is often used to keep fish in large cages on the open sea. In this case, the fish are fed, and, sometimes, the places where fish are kept are oxygenated. With this method, about 1 kg of marketable fish is obtained from one cubic meter of water area. The total productivity is 500-2500 kg per hectare per year.

The intensive cultivation method for Dorado involves several phases. First, fry are obtained from caviar. In pools with a temperature of 18 - 26 ° C and a fish density of 15-45 kg per cubic meter. meter is the primary feeding. The first stage ends when the young dorado reaches a weight of 5 g.

For further rearing, golden spars are transferred to more voluminous places of detention. These can be above-ground, indoor pools or floating tanks located in the coastal strip, or cage structures installed in the sea.

Dorado tolerates crowded life well, therefore the density of fish in these reservoirs is quite high. The main thing is that there is enough food and oxygen. Under such conditions, the dorado grows up to 350-400 g per year.

All breeding methods for Dorado have their pros and cons. The most advanced farms use an intensive method of feeding fish in submerged marine cages. In this case, no costs for aeration, cleaning and pumping of water are required. Although the density of the fish population in a cage should be less than in an indoor pool.

The division of labor between fish farms naturally took place. Some began to specialize in the production of juveniles, others in the cultivation of golden spar to a marketable, commercial state, that is, up to a weight of 400 g. Dorado can grow much more - up to 10 or even 15 kg, but large fish is in less demand, its meat is considered less delicious.

Dorado is not fed for 24 hours before being sent for sale. Hungry fish tolerate transportation better and retain their fresh appearance longer. At the stage of fishing, the fish are sorted: damaged and non-living specimens are removed. The methods of catching a fish batch depend on the method of keeping. Most often it is a collection of fish with a net or a compact resemblance of a trawl.

The costs of artificial cultivation of Dorado are quite high. Each individual costs at least 1 euro. Not more than the prime cost of fish caught in a natural, traditional way, but it is quoted by buyers higher. Therefore, sometimes farmed dorado is presented as fish caught on the high seas.

Dorado's natural enemies

This fish is large enough to interest large aquatic predators such as sharks, but small enough to fight them. Therefore, they are the main threat to the dorado. Many species of sharks live in the Mediterranean Sea and Atlantic: sand, tiger, black-finned, lemon and others. Shark of almost any kind is not averse to snacking on dorado - they are generally not particularly picky about food, but dorado they are clearly attracted more than other prey and, if they see this fish, they tend to catch it first of all. Dorado is probably the same delicacy for them as it is for humans.

The people themselves can also be counted among the enemies of the dorado - despite the fact that a large number of this fish are bred on fish farms, the catch is also active. The only thing that hinders him is that Dorado live alone, so it is difficult to purposefully catch them, and usually this happens along with other species. But the adult fish is large enough not to be afraid of most of the fish found in sea waters predators. Caviar and fry are much more dangerous. Caviar is actively eaten by other fish, including small fish, the same applies to fry - moreover, birds of prey can catch them. Particularly large of them also hunt for young dorado weighing up to a kilogram - after all, birds of prey, in general, cannot cope with already adult, large individuals.

Interesting fact: Dorado can be gray or royal - the second type has a more tender fillet, painted in a slightly pinkish color.

Cooking fish: recipe description

Price

Golden Spar is traditionally a delicacy fish. The usual catch with nets and trawls is quite expensive due to the tendency of the Dorado to live individually or in small flocks. Artificial breeding has made the fish more affordable. The real decline in prices began only in the 21st century, with the emergence of large fish farms.

Dorado can be purchased on the European market for 5.5 euros per kilogram. In Russia, prices for golden spar are close to European ones. Retail dorado price ranges from 450 to 600 and even 700 rubles per kilogram.

Food

Dorado can develop quite high speed in pursuit of prey with the help of powerful fins and a muscular body. In most cases, other smaller fish become the target of the Dorado's pursuit. However, it is not enough to catch up with the prey, it must also be kept.

This problem is not faced by the representatives of the species - powerful large teeth will not allow any victim to hide. In addition to fish, dorado can feast on crustaceans and all kinds of molluscs. Sometimes representatives of the species feed on algae.

Living in artificial reservoirs and pools in which fish are bred for both beauty and fishing, Dorado feeds on granulated food and at the same time feel normal. Of course, the ideal feeding conditions for dorado in captivity will be the same fish as in the wild.

Age and size of the Dorada fish

According to " International Association Sport Fishing ”(IGFA https://www.igfa.org/) - the record for catching Dorada fish was recorded in 2001 at Fort Lauderdale in the USA. The caught fish sample weighed 17.2 kg. The maximum recorded length is 70 cm. The average fish size is about 35 cm. The maximum life span is about 10-11 years.

Angler: Mr, Miquel-Angel Collell Urbano, SPAIN.

Juveniles of Dorada up to 35 cm usually live in shallow waters up to 30 meters. More adult representatives from 35 cm can live at a depth of over 30 meters. The largest individuals can descend to a depth of 150 m.

In modern Russia, its main percentage is imported from Greece, Turkey, Tunisia and Cyprus. Despite the fact that the gilthead is generally unpretentious to external environmental conditions, it does not tolerate cold temperatures, which is why there is no wild gilthead on the Russian (and Moscow in particular) market.

There are three main ways to breed golden spar:

 • Intensive

The fish are bred in ground-based containers, often indoors, imitating certain times of the year with light. This method is suitable for countries with a climate that is not warm enough for dorada.

 • Semi-intensive

Huge floating cages and feeders are being built near the shore (you can read more about cages and aquaculture in our previous article)

 • Extensive

The fish is grown almost freely in lagoons and backwaters. This method is as close as possible to the usual catch, that is, the properties of fish almost do not differ from wild ones. However, this breeding method is only suitable for warm countries.

All three breeding methods of gilthead breeding have almost the same final income, however, the costs of the extensive method are much less due to the absence of complex structures and expensive equipment.

Any fish is always a treasure trove of useful vitamins and micro-minerals. This article will talk about fish, which has an interesting name "dorado". It is most commonly found in the Mediterranean. Dorado is one of the most delicious and popular in the Caribbean. Such fish is rich not only in enzymes necessary for the proper functioning of the body, but also is a low-calorie product that is used by the fair sex during a diet.

This fish is grown artificially in countries Western Europe (Italy, France, Spain) and Turkey. Dorado (or, as it is also called, sea carp) is a delicacy, as it is grown under special conditions. There is a special food for them, and they are fed up to a certain period until they reach a certain size.

What it looks like and where it is found

Sea crucians look very unusual. They have a small, oblong oval body. The head has a drooping profile and the eyes are located in the middle. The mouth consists of two thick lips. The corners of the lips are always directed downward, from which it seems that the dorado is always sad. The fins of the fish are quite spiny and hard.

The body of the fish has a light gray color, its dorsal part is completely dark. The head is painted in a gray-lead shade, and between the eyes, among all these gray tones, a golden spot stands out.

As mentioned above, fish are found in the Mediterranean Sea. It is artificially bred in Spain, Italy, Greece, Turkey, the Caribbean, off the coast of North Africa. At the end of the 20th century, the dorado appeared off the coast of the Crimea. Also, their population was found near the Bay of Biscay, in the North and Irish Seas. But, of course, a large number of Dorado live in the Mediterranean. These waters are warm enough and great for them.

Basically, sea carp live sedentary, but there are those that stray into a flock and migrate for a certain season closer to France and Great Britain.

Fish that have recently been born, that is, young individuals, prefer to live in lagoons, while adult males and females move into the depths of the sea.

 3. The appearance of fish is fundamentally different from each other.

Many still agree that the meat of both fish tastes the same, so there is no point in choosing which tastes better. And they are identical in chemical composition. They include iodine, phosphorus, protein compounds and various vitamins, which indicates that they are both equally useful. The only thing that the dorado has only one plus that qualitatively distinguishes it from the seabass is bones. This has already been discussed a little higher. Seabass has strong and hard bones that a person can accidentally swallow, and this will cause many complications and problems. You just need to be very careful, then none of the fish will harm your health in any way, it will be tasty and healthy.

General benefit

 1. Due to the presence of vitamins of group B, in particular B2, eating tender fillet of Dorado strengthens the immune system and prevents the development of various colds and viral diseases.
 2. Dorado fish improves the functioning of the digestive system. Thanks to its beneficial properties, it lowers blood cholesterol levels and prevents the development of cholesterol plaques that interfere with proper blood circulation.
 3. Dorado is a prophylactic agent against the development of cancer cells and oncological diseases.
 4. Vitamins have a great effect on the work of the cardiovascular system. The heart muscle is strengthened, which prevents the risk of stroke, heart attack or other diseases. The walls of blood vessels are also strengthened, which again contributes to the excellent work of the circulatory system.
 5. Dorado also has a beneficial effect on hair. Thanks to enzymes and nicotinic acidcontained in the product, the hair ceases to be so brittle. They acquire a natural shine, look healthy and lush.
 6. Vitamin B12 influences active brain activity, saturates the body with the necessary energy, and then it has the strength to work.
 7. The nervous system is strengthened, respectively, the person becomes more stress-resistant.

For women

This fish is a completely dietary product, so it can be consumed during diets and not be afraid to get fat. Its calorie content has already been written a little higher. This product also contains omega-3 acids, which have a positive effect on the regeneration of skin cells and make them much younger, delaying the appearance of the first unwanted wrinkles. In addition, there is a lot of zinc in fish, and this has a positive effect on the functioning of the genitals. This mineral fights against such ailments as infertility, improves ovarian function.

For men

The same zinc, which is so beneficial for women, is also necessary for the stronger sex. Zinc, together with magnesium, increases testosterone levels, prevents the risk of infertility, and improves the fertility of the reproductive system. Thanks to this trace element, the quality and production of sperm are increased.

During pregnancy

Dorado is recommended to be eaten by expectant mothers. In this fish, as mentioned above, there are a lot of useful vitamins and minerals that have a positive effect on the condition of women and children. In addition, fish contains folic acid, which plays an important role in the development of the fetus. It prevents the risk of cerebral palsy, participates in the formation of tissues and organs of the unborn child during the first trimester. Its deficiency threatens with premature placental abruption, miscarriage and death of the child in the womb.

When breastfeeding

During lactation, fish should be introduced into the diet gradually and in small portions so that the newborn does not have an allergic reaction, as well as pain in the abdomen.

It is advisable for a new mother to eat not fried or baked fish, but cooked with a small amount of salt.

For children

Dorado can be introduced into the diet for children from 11 months, but the portion should not exceed half a teaspoon. Then it can be gradually increased. But this must be done with caution, as the child may experience abdominal pain, allergies and other complications.

When losing weight

Firstly, dorado copes well with the functions of improving the digestive system and metabolism. Metabolism is accelerated, due to which a person loses weight faster. A plus to this is that this product is low in calories, and it can be safely included in the diet. Moreover, a diet is always a great stress for the internal state of the body, because it does not receive the required amount of vitamins and minerals. Eating fish will smooth out these corners, as it contains a lot of useful and nutritious elements.

With pancreatitis

If a person suffers from pancreatitis, then dorado fish should be a must in his diet. This product is a source of protein, which contains amino acids, vitamins, minerals and other trace elements that improve the functioning of the digestive system. Moreover, with pancreatitis, you should not eat fatty foods, and dorado is a seafood with a very small percentage of fat content.

Harm and contraindications

Despite all the useful properties of dorado, it still has some disadvantages:

 2. Very rarely, but there are cases of individual intolerance.
 3. Children need to be given it very carefully, as there are many small bones.

How to choose and store

To distinguish fresh from stale dorado, you need to pay attention to the condition of the heads. Firstly, the heads must be mandatory, you do not need to buy just carcasses. Secondly, the eyes and gills of a fish will tell you a lot about freshness. If the eyes are clouded, and the gills have lost their bright red hue, then this indicates that the product is not the first freshness. It is not worth buying, so as not to harm your health.
